Easy Nutella Cupcakes with Buttercream Frosting

I’m not a huge Nutella fan but had a request to make Nutella cupcakes for a baby shower so I thought I’d give it a try.
Homemade chocolate cupcakes to start with (I suppose boxed cake mix works but I haven’t tried it) filled with Nutella and then Nutella chocolate buttercream frosting. These were a huge hit!! And I’ve had repeat requests for them so it’s a keeper of a recipe.

Chocolate cupcake ingredients:
• ½ cup unsweetened cocoa powder
• 3 large eggs
• ½ cup hot water
• 2 ¼ cup flour
• ¾ teaspoon baking soda
• ¾ teaspoon baking powder
• ½ teaspoon salt
• 1 ⅔ cup granulated sugar
• 1 TBSP vanilla
• ¾ cup sour cream
• 1 cup butter (2 sticks, cut into small pieces)

Nutella Chocolate Buttercream Frosting Ingredients
• ½ cup unsalted butter
• 13 oz container of Nutella
• 4 cups powdered (confectioners) sugar
• 1 tsp vanilla
• 7 TBSP heavy cream

Filling for cupcakes
• Container of Nutella (I buy two 13 oz Nutellas)

Nutella Hazelnut Spread 13 oz (Pack of 2)

Cupcake Instructions:

  1. Preheat oven to 350°
  2. Line cupcake tin with liners
  3. Mix together in medium bowl and set aside the flour, baking soda, baking powder, and salt.
  4. Whisk together unsweetened cocoa and hot water in a small bowl.
  5. Heat butter and sugar together in medium saucepan on low to medium heat setting.
  6. Whisk over heat until they are combined and melted together.
  7. Add the cocoa powder mix to the butter and sugar mixture.
  8. Remove from heat and blend with electric mixer for 4-5 minutes until it cools.
  9. Add eggs one at a time mixing thoroughly between each addition.
  10. Mix in vanilla
  11. Alternate adding flour and sour cream in additions of thirds until they are completely blended together.
  12. Fill cupcake liners ½ to ⅔ full and bake 15-18 minutes until toothpick can be inserted and comes out cleanly.
  13. Core out the center of the cupcake (I use Wilton Treat Corer). Fill with Nutella by using a piping bag with a medium-sized tip such as Wilton 1M Open Star Piping Tip(2pk)

Nutella Buttercream Frosting Instructions

  1. Beat butter until it is creamy and slightly pale in color.
  2. Alternate adding in powdered sugar and Nutella, beating between additions until thoroughly mixed.
  3. Add in vanilla.
  4. Last, add in heavy cream on tablespoon at a time until appropriate consistency for piping.

For decorations, I used Wilton Sugar Pearls, White, 5 Oz and Wilton White Sparkling Sugar, 8 oz. but there are so many options out there to use.

Happy Baking!
