Homemade S’mores without a Fire

After posting this to my Instagram and Facebook page, I was asked for the recipe and thought this would be the easiest way to share it! Usually in order to have s’mores, it requires lighting a fire, finding sticks long enough for the marshmallows to toast on, and hopefully make it through the s’mores construction without getting any burns. And for those parents out there, keep a careful eye on the kiddos! This recipe seemed like a good one to try as a substitute except I added more melted butter to the graham cracker crumbs than the recipe calls for. Most of the ingredients are at the discretion of the baker (or the baker’s “helpers”) particularly the chocolate chips and mini marshmallows.

2 cups graham cracker crumbs
1 stick of melted butter (I use a little more depending on texture)
1/2 cup of sugar
Chocolate chips (I use milk chocolate)
Mini marshmallows

Preheat oven to 350 degrees. Spray a regular muffin tin with nonstick
spray. In a medium bowl, mix graham cracker crumbs, butter, and sugar.
Mixture will be coarse. Place 1 1/2 to 2 tablespoons of graham cracker
crumbs in each muffin well, pressing down firmly. Bake for 5 minutes.
Remove pan and add chocolate chips and mini marshmallows to each
muffin well. Measuring is not necessary. Add another layer of graham
cracker crumbs 1 1/2 to 2 tablespoons on top of chocolate chips and
marshmallows. Press the crumbs down firmly (I use a measuring cup)
and bake for 4 minutes.
Remove pan from oven and add mini marshmallows and chocolate chips.
Place pan back in oven and set to broil for 2-3 minutes or until
marshmallows are golden. Leave oven door slightly open to monitor
marshmallows.
Remove the pan and allow to cool for 15 minutes before removing.
These are messy and crumbly but well worth it!
